This fine juniper-lid gin is made in the traditional London dry style from the maceration into pure wheat spirit of juniper, coriander and angelica root, left for 12 hours to allow their flavour characteristics to fully infuse. A unique botanical mix of Cotswolds lavender, bay leaf, grapefruit, lime, black pepper and cardamom seed are then added to a tailor-made hybrid Holstein still with a capacity of 500 litres for distillation. The gin is finished with naturally refined Cotswolds water. In charge of operations is the energetic and passionate Nickolas Franchino, archaeologist, anthropologist and former cage-fighter turned distiller. Cotswolds gin is robust enough to stand up to tonic and smooth enough to craft the ultimate gin martini.
